How feasable would it be to somehow break into the cold start wiring to make a switch you could use at WOT to use the cold start injector for more fuel/power?

Or am I thinking too much again?  ;ay

I think you are thinking too much.  I have heard of people deleting it (with aftermarket intakes) but not of using it to richen up the mixture while under power.

I don't know if it is located well to do what you are thinking of anyway.

Personally, I'd use an adjustable regulator to add more fuel under load and when I managed to get my car to make enough power to max out the stock injectors I'd change them to higher flow units.
